Catering has partnered with a third generation caviar
producer to prepare our wonderful American sturgeon caviar
right here in Illinois. The flavor and texture is not
only exceptional but environmentally sound, as well. |

process unique to Calihan Catering is that we cure and
smoke our own salmon. Alaskan Wild Kings are carefully
cured, then delicately smoked using apple or cherry fruit
woods, which are sweeter than other woods. This result
is a quality of salmon rarely seen in the market place. |

week Calihan Catering flies in select artisanal cheeses
from around the world, with special interest in the products
of small, domestic farms. |
