Calihan Signature Dishes

Herb Crusted Tenderloin of Beef. This classic dish combines U.S.D.A. choice beef tenderloin and fresh herbs, fire roasted and paired with haricot vert, asparagus, mélange of forest mushrooms & merlot demi glace.

Sautéed Amish Chicken Breast. Semi boneless Amish chicken breast sautéed until golden, accompanied by oven roasted French fingerling potatoes, yellow& orange baby carrots, caramelized shallot, and a rosemary natural jus.

Olive Oil Poached Halibut. Fresh Alaskan halibut low poached in imported Italian olive oil, presented on a bed of wilted bow tie arugula, and topped with a red & yellow heirloom tomato-mint salad.

Roasted Vegetable Tian. Zucchini, yellow squash, eggplant and Holland peppers lightly cooked and seasoned with fresh herbs, arranged in a timbale with herb goat cheese, topped with micro greens and drizzled with arugula pesto.

Chocolate Praline Dome. A light chocolate dessert flavored with hazelnut praline. The bottom layer is sable bretton covered with a pulverized dark chocolate, served with a duet of chocolate sauces and garnished with a white chocolate curl.

Lemon Passion Fruit Tart. Tropical custard tart on sweet crust, served with blueberry and raspberry cullies, fresh berries and pulled sugar garnishes.

Micro greens are intensely flavored sprouts that come in an array of flavors, colors and pureness. They are used to bring additional flavor profile to a dish while adding a delicate and dramatic look to the plate.

Calihan Catering has partnered with a third generation caviar producer to prepare our wonderful American sturgeon caviar right here in Illinois. The flavor and texture is not only exceptional but environmentally sound, as well.

A process unique to Calihan Catering is that we cure and smoke our own salmon. Alaskan Wild Kings are carefully cured, then delicately smoked using apple or cherry fruit woods, which are sweeter than other woods. This result is a quality of salmon rarely seen in the market place.

Every week Calihan Catering flies in select artisanal cheeses from around the world, with special interest in the products of small, domestic farms.
